I am NOT a great fan of frozen fish in the simple form because it always give away this frozen flavor that is distinctly different form a fresh fish so in my book foreseen fish is lands itself much better to bit more processed dishes, be it soups, stews, breaded, or cakes. Because... they mask a tone that flavor and they also let only through the good flavor of the fish and add some extra stuff that takes it to the next level. This is my fav recipe because... It uses mashed potatoes as a bonding agent, they are naturally gluten free and you go from one pound of fish to three pounds of end product!!! You won't taste the potatoes inside, it will all taste like fish but more delish! And super delicate!HERE IS HOW I MAKE SIMPLE, FAST AND DELISHEST! FISH CAKES ON THE PLANET!:Ingredients1 lb filets deforsted2 eggs2 lb mashed potatoes that will GO INTO THE MIX!!! (I usually just make more mashed potatoes the day before so I have them for the next day fish cakes.. or alternatively if you plan to serve this cakes with mashed potatoes, just cook way more potatoes and divide, two pounds go into the cakes, and the rest to be served as a side)why mashed potatoes?-because they will take this to heaven! and because you will have a tone cakes!1 Tbs pminced onionoptional: salt, pepper, finely chopped parsley... without them they are great as well as manypeople have to watch for those, but if you can tolerate those, add to your heart desire. Also you can add ANY other spices if you like.Boil fish about 15 minutes or until it begins to flake. Watch out for the foam. It will boil over.Place fish into food processor and pulse until fish is shreddedAdd mashed potatoes and pulse until blendedStir in onion and egg.Form into patties and fry. This is an old recipe from Normandy, France. There are variations of it all over the internet butI simplified it to perfection and always use the same method. When I feel bit more creative - or feel like gluten - then I coat them with whisked egg and roll inthe bread crumbs and then fry... or stick it into the oven and bake at 350°F - will take about 30 minutes.Keep checking for this deep golden color and see if they are done.. just cut one in half and you will know.
